Brussels Sprouts Coconut Curry

These nutritious powerhouses, in my opinion, are unfairly maligned, and it’s usually due to unfortunate encounters with terribly cooked Brussles Sprouts. Give ’em another shot by trying this recipe. I made it last week, and it was quite a yummy departure from the tried and true roasted version (which I also happen to love). I didn’t have cumin seeds on hand, so skipped that part, and it was still quite tasty.
